Ingredients
· 370 grams general purpose flour.
· 10grams of sugar
· 7grams yeast
· 200ml milk
· One egg, beaten
· 10 grams kosher Salt
· Egg wash to bake
Method
- Mix yeast with two tablespoons of warm (not hot!) water. Set aside, covered, for 10 minutes. After this time, it should be bubbly if not very frothy.
- In a mixing bowl, add yeast mixture to flour, sugar, milk, egg, and salt. Combine to form a scraggy dough. Set aside, covered, for 35 minutes.
- After 35 minutes, return to dough, stretch, pound, and pull until the dough offers resistance. Shape to a round ball, cover, and rest for another 35 minutes.
- Give the dough one final stretch and pull, then shape into eight (8) equal sized balls. Place on parchment paper on a baking tray and cover. Rest for 3 hours. (less if its super hot where you live!)
- Preheat oven to 220° C (430°F).
- Once oven is at temperature, brush each bun with egg wash. Sprinkle sesame seeds on each bun.
- Place baking tray and buns in oven and bake for 12-15 minutes - or until a rich golden brown.
